Brownies are my absolute favorite dessert in the whole world! I would rather have brownies than cake and ice cream for my birthday. Now, I grew up having the box mix, as that was the easiest for my mom to make. She always got the fudge, gooey type with extra fudge, that was always so good!
So as an adult, my quest became to find brownies that were just as good, if not better than the ones from the box. Oh, and I only wanted to use cocoa powder and maybe chocolate chips, but no other types of chocolate (as I don’t stock them in my pantry.) Little did I know how hard that would be!
I tried so many recipes and they all ended up being dry and cakey, not dense and fudgy. Finding that perfect recipe would be hard! This recipe is best recipe I’ve found!
These peppermint brownies are a fantastic way to celebrate the holiday season! Peppermint and chocolate are some of my favorite Christmas flavors! So try out this recipe, its sure to not disappoint!
Peppermint Brownies
Ingredients
- 1/2 cup butter softened
- 1 cup sugar
- 1/2 tsp. peppermint extract
- 1/2 tsp. vanilla extract
- 2 eggs
- 1/2 cup flour
- 1/2 cup cocoa powder
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 2 cups chocolate chips
- 1 cup crushed peppermint candy
Instructions
- Preheat oven to 350°.
- Grease a 9x9 pan.
- Beat together butter, sugar, peppermint extract and vanilla extract.
- Add eggs one at a time, beating well between each addition.
- Stir together flour, cocoa powder and salt.
- Gradually add to butter mixture.
- Mix in baking soda.
- Fold in chocolate chips.
- Scrape batter into prepared pan, spreading evenly.
- Scatter crushed peppermint candy over the top.
- Bake for 25 minutes, until brownies begin to pull away from the edges of the pan.
