A life grown at home

Growing up, I was a kid who hated eating her veggies. Oh I’d eat a few things like green beans, corn and potatoes, but anything else was a no go. So the best way around it? Soup! This soup and other like my favorite Vegetable Beef Soup, were the best way to get me to eat my veggies. Plus, this recipe even used ones that I would normally NEVER eat!

Even to this day, cabbage and zucchini are on the bottom of my list of veggies that I eat. While I try to eat more veggies, it’s really hard. Since I grew up not liking most veggies, it’s hard to even want to make them. Then, my husband literally cannot eat corn, so there goes one of vegetable I like!

So the best way to get veggies into me and now my own children is this soup! I would otherwise be no closer to eating cabbage. While I’ve expanded my zucchini range, cabbage just doesn’t do it for me. So this is the only recipe I’ll buy cabbage for.

Thankfully, everyone seems to love this soup! It cooks the vegetables to the perfect consistency and makes this perfect for a cold winter’s night.

Minestrone Soup

Servings 8 Servings

Ingredients
  

  • 1 lb. kielbasa
  • 1 Tbsp. olive oil
  • 1 cup diced onion
  • 1 garlic clove minced
  • 1 cup carrots sliced
  • 1 tsp. basil
  • 2 small zucchini sliced
  • 1 can (14 oz.) diced tomatoes
  • 2 cans beef broth
  • 2 cups shredded cabbage
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 can (14 oz.) pork and beans

Instructions
 

  • Slice kielbasa 1/2 in. thick.
  • Brown in oil.
  • Add onion, carrots, basil; cook 5 minutes.
  • Add zucchini, tomatoes, broth, cabbage, salt and pepper.
  • Bring to a boil; simmer uncovered for 1 hour.
  • Add beans; simmer another 20 minutes.
