I wanted to start off this blog honoring my husband, by sharing one of his absolute favorite recipes! My husband, Adam, grew up in Texas and has the appetite of any true Texan. He loves just about anything that is Tex-Mex, which includes lots of spice! Now for myself and the children, we can’t handle lots of spice. So I make meals with all the flavors of the South, just not the excessive spice. My husband makes his own hot sauce that he uses to spice up all the food. So no worries, my meals are not spicy in any way!
One of his most requested meals is this delicious Hearty Chili. If it can satisfy a man who grew up in Texas, then I’m pretty sure it’s a good recipe! I’ve even had people who normally don’t like chili request this recipe! My husband and I hosted a Christmas party for the leaders in our church and this is the recipe I made. I’m pretty sure I had every single person compliment me on this chili, even the ones who were a bit skeptical about it in the beginning! So it’s definitely a crowd pleaser!
Now this is not a typical Texan chili that’s all meat. While we love meat, I prefer to stretch my meals and add a bit more substance to it. So this recipes uses lots of beans to add that heartiness. It definitely does not take away from the deliciousness of this meal. The best part is if you need to stretch this meal to feed a crowd, just add more beans!
The fastest way to cook this chili is in an Instant Pot. I can have a hot meal in under an hour! This is the way we do it the most often, as I’m still trying to remember to defrost my meat the night before! If I do remember, this can easily be made in a slow cooker. In fact, it’s how we prefer it! So use whichever method works for you. I’ve added slow cooker directions in the notes of the recipe below.
We serve this with corn bread on the side and cheese, sour cream and hot sauce for toppings. This meal never lasts long in this house! I hope you enjoy his recipe just as much as we do!

Instant Pot Hearty Chili
Ingredients
- 1 lb. ground beef
- 1 onion diced
- 4 oz. can diced green chilis
- 29 oz. can diced tomatoes
- 29 oz. can tomato sauce
- 2 - 29 oz. cans black beans
- 1/2 tsp. celery salt
- 2 tsp. ground cumin
- 3 Tbsp. chili powder
- 4 1/2 tsp. black pepper
- 2 tsp. salt
Instructions
- Sauté ground beef until browned.
- Add all remaining ingredients.
- Close lid and set vent to Sealing.
- Press bean/chili button.
- Vent either naturally or manually. Your choice!
