Sometimes the best recipes come from desperation! We were making tacos one day and only after we had browned the meat and added our Homemade Taco Seasoning Mix, did we discover that we only have a couple of tortillas left.
Well, with our size family, that would not work! So now what we were supposed to do? We could have done nachos, but we were out of tortilla chips as well. So, necessity is the mother of invention and Inside Out Taco Skillet was born! It’s all the flavors of regular tacos, just with the tortillas added in the mix and served in bowls. It turned out great and we still make it to this day!

Inside Out Taco Skillet
Ingredients
- 1 lb. ground beef
- 1 recipe Homemade Taco Seasoning Mix
- 1 can (14 oz.) black beans drained
- 2 tortillas cut into 1/2 in. strips
- 2 cups shredded cheddar cheese
Instructions
- Brown meat in a skillet over medium high heat.
- When you can no longer see pink, add the taco seasoning mix.
- Mix in the beans and tortilla strips.
- Top with cheese.
- Cover with lid and steam the mixture over medium heat until the cheese is melted.
- Serve hot and enjoy!
