Christmas season is here! To be honest, we start a little early in this house and so everything is already decorated. So to start off the season, what would be better than cookies?
These cookies have an interesting story. They actually started out as a recipe for my sugar cookies, which are the best sugar cookies I’ve ever had, and I’ve had a lot of sugar cookies! I decided to experiment with the recipe and see if I could make some chocolate sugar cookies. So with a bit of tweaking, I whipped up the recipe and made these cookies!
Now as chocolate sugar cookies, they are absolute failures, but instead, I came out with a new type of cookie for my recipe box! The cocoa powder ended up giving these cookies a shortbread texture and these Chocolate Shortbread Cookies were born! So I thought these fun cookies would be a great way to start off the holidays, and who can say no to chocolate?!? (Okay, my best friend can, but we’ve forgiven her already!)

Chocolate Shortbread Cookies
Ingredients
- 1 1/2 cups powdered sugar
- 1 cup butter softened
- 1 egg
- 1 tsp. vanilla extract
- 2 1/4 cups flour
- 1/4 cup cocoa powder
- 1 tsp. baking soda
- 1 tsp. cream of tarter
Instructions
- Cream sugar and butter.
- Add egg and vanilla, then the dry ingredients.
- Refrigerate 2-3 hours.
- Preheat oven to 375°.
- Roll into balls, place on greased baking pan and flatten.
- Bake for 7-8 minutes or until lightly browned around the edges.
