I make breakfast during the week from scratch most days. This means getting up early and getting into the kitchen. With being pregnant and needing to rest a lot, it also means my kitchen is usually messy from dinner the night before. So not only do I have to make breakfast, but I’m usually cleaning up a mess before I can even get started!
While doable, breakfast bakes or casseroles like this one are really helpful! They are assembled the night before, so all you have to do in the morning is heat up the oven and slide this in!
While not a typical Christmas recipe, I’ve found this recipe to be perfect for those hectic Christmas mornings. We usually receive cinnamon rolls from a friend which we usually eat on Christmas morning, but my husband prefers less sweet breakfast, so I like to serve this dish along with it.
This version is make with sausage, but you can use any meat of your choice, like bacon, ham or even pre seasoned ground beef. While I’m not usually a huge fan of sausage, I prefer this as the meat for this breakfast bake! With bread, eggs, and cheese as well, this makes a really filling recipe that we all enjoy!
I got this recipe at a potluck at this small church we were attending at the time in Oregon. While I’ve never been a huge fan of breakfast bakes, I was impressed with this recipe and requested it! We’ve made it many since I got this recipe so many years ago, and we’ve always really enjoyed it! We even make it for guests and they love it!

Cheddar Sausage Breakfast Bake
Ingredients
- 6-8 slices bread your choice
- 12 eggs
- 3/4 cup milk
- 1 can cream of chicken soup
- 1 lb. ground sausage browned
- 2 cup grated cheddar cheese
Instructions
- Butter a 13x9 pan.
- Trim crusts off on bread and butter one side.
- Put bread butter side down in pan.
- Mix eggs, milk and soup.
- Pour over bread.
- Sprinkle sausage and cheese over top.
- Refrigerate overnight.
The next morning:
- Preheat oven to 350°.
- Take casserole out of fridge to sit on counter while oven preheats.
- Bake for 45 minutes.
