A life grown at home

This salad is one of my favorite salads! To even say that is something special for me! I’m not a huge fan of salads and tend to avoid them. I’ll skip over them for the most part. Yet, when this is on the menu, I eagerly look forward to it!

It’s the combo of chicken, cheddar cheese, dried cranberries and grapes that really sell the deal. You combine all those toppings with my favorite dressing, poppy seed vinaigrette and this is a salad I crave! In my last pregnancy, I wouldn’t even let them waste the leftovers, as I was full on craving this salad.

While some of my children hate salad on principle, this is the recipe that the will eat the most of. Granted, the lettuce is usually still left on the plate, but hey, I’ll count it as a win!

So if you’re looking for a tasty side dish ( which is easily done by leaving out the chicken), or a light main meal, this salad is perfect! The combo of flavors leave you craving this! Try it out, I’m sure you’ll love it!

Cheddar Chicken Salad

Ingredients
  

  • 4 cups romaine lettuce torn
  • 1 lb. cooked chicken chopped
  • 1 cup grapes halved
  • 1/2 cup dried cranberries
  • 2 cups shredded cheddar cheese
  • 1/2 cup pecans toasted
  • Poppy Seed Vinaigrette

Instructions
 

  • Add lettuce to a salad bowl.
  • Sprinkle with remaining ingredient.
  • Toss.
  • Serve with dressing.
